Weeknight Pasta

For me, weeknight meals are the hardest! It's a rush in the morning, or a rush in the evening.

So, for a packed evening, between homework, bath time, cleaning, and meltdowns, try my go-to weeknight pasta recipe. It's protein and veggie packed with cream, cheese and garlic...you cannot go wrong with that!


For this recipe, you will need:

5 links Spicy Chicken Sausage (Costco)

Feel free to use cut up chicken breast or thighs if you'd like

For this dish, I used both for flavor

1 cup fresh chipped mushroom

1 cup fresh baby spinach

1 cup finely chopped kale (the power green mix works well too)

1/2 cup chopped red onion

4 cloves minced garlic

1/2 cup of chicken broth

1/2 cup heavy cream

1 cup parmesan cheese

8 oz al dente pasta of your choice

salt, pepper, cajun seasoning


How to make this dish:


  1. Boil the pasta al dente, drain it, sprinkle in a little olive oil, and leave it off to the side

  2. In a large pan, using 1 teaspoon of oil, saute the chicken sausage

  3. Once it's sizzling, throw in the onion and garlic and allow it to cook until the garlic starts to leave it's aroma

  4. Next, add in the mushrooms, followed by the spinach and kale

  5. Let this cook for about 3 minutes before adding in the broth

  6. Last, add in the pasta, a dash of salt and pepper, and a dash of cajun spice

  7. Top it off with the cream and parm...and you're done!

Serve this with a slice of warm garlic bread and broccoli!
