Sweet and Spicy Caulirice

What screams sweet, spicy, hearty, comforting and HEALTHY?


This sweet and spicy Cauliflower Rice will have your heart harping for more…and you wouldn’t feel guilty to indulge.


This recipe highlights cranberries, sun-dried tomatoes and Shrimp to make a hearty meal, perfect for Fall or just about anytime you're looking for something comforting.



For this recipe you will need:


1 package frozen Cauliflower rice

6 to 8 large shrimp (cleaned and de-veined)

1/4 cup of frozen kale 1/4 cup of sun-dried tomatoes in oil

1/4 cup of dried cranberries 2 cloves of chopped garlic 1 teaspoon of Trader Joe's, Peri Peri sauce


Dashes of salt, pepper, chilli flakes, garlic powder


The first thing you're going to do is spray your pan with a little bit of avocado oil.


When it's heated up, throw in your chopped garlic and sun-dried tomatoes.


Once that's added in and sizzles for a few minutes, add in your frozen cauliflower rice and cover it for about five minutes.


Next, add in your frozen kale, cranberries, and all your spices.


Cook this uncovered for about five minutes


In another pan, added a little bit of oil and fry your shrimp with a little bit of salt and pepper until fully cooked.


Once it's cooked, drizzle it with the Peri Peri sauce. If you would like your shrimp to not be spicy, you can skip the sauce.

When your shrimp is cooked, grab a bowl, use the cauliflower rice as the base, top it with shrimp, and enjoy!
