Sunday Mahi Mahi

Hey friends! Welcome back to my page. I’ve been wanting to share this recipe with you for a while now and Finally got around to it!


Sundays are special for our family. We spend a lot of time together, catching up from the week, going outdoors, house projects but most importantly, we get to enjoy all 3 meals together.


With that said, Sundays are also very busy! So, quick and delicious meals come

in handy. I mean, who wants to be in the kitchen cooking all day…I sure don’t!


For this recipe, you will

need:


6 portions of Mahi Mahi

4 cloves of chopped Garlic

1 tsp Crushed Red Pepper flakes

2 Lemons

1/2 cup Heavy Cream

1/2 cup Chicken Stock

4 tbsp butter

2 tbsp olive oil


For the sides:

Sautéed Asparagus

Mashed Potato (mine’s store bought at Costco)


Directions:



Marinate the Mahi Mahi portions with Salt and pepper to taste!


I added a generous amount of pepper because our family loves the heat!


Next, heat up a skillet on medium (cast iron if you have one) with 2 tbsp butter 2 tbsp Olive Oil


Add the filets in face down



Let it cook for about 3 minutes on a medium flame and then flip them



I flipped them, and also cut them into smaller pieces where they naturally split, so they’d cook faster and more evenly.

I also added in the chopped garlic, crushed pepper, and lemon!



Once these ingredients are added, cover the skillet until the fish is cooked all the way thru (about 5 minutes)

For the side, I sautéed Asparagus together with a tiny bit of garlic, lemon and salt and covered it until It cooked thru (about 7 minutes)



I had a little extra time, so I wanted to make a creamy sauce for the fish and mashed potato!



In a saucepan, I added 2 tbsp butter and 1 clove of chopped garlic and let it cook for about 1 minute on low heat



Next, I added the heavy cream to the pot and let it simmer Until the sauce was thick and creamy. Last, add 1tsp of lemon juice..slowly stir it in, DO NOT let it boil!!!




To plate…

Place a scoop of mashed potato on your plate, add the asparagus to the side!


We had a little surf and turf action going on, so I added steak to this plate

(totally optional)



Finally..top it off with the Lemon cream sauce!!! My plate is a little shy, because they took it all before I got to it!!

It is yummmm…I promise!
