Prawns Mole (Prawns Pickle)

If you ever visit Goa, you cannot leave without trying this mouth watering dish. You will think about it for THE REST OF YOUR LIFE.


I remember my parents making it when I was little. They'd let it sit out overnight so the flavors would take and I would sneak downstairs and eat it with a slice of white bread (so comforting…and delicious)


Mole is best served alongside a fish curry and rice meal OR in our home, we eat it with Dal and Rice (Indian Lentils)


It’s a Goan delicacy and a little goes a long way.


Now, let’s get cookin’


These are the ingredients you’ll need to make 2 lbs of Mole

2 lbs cleaned shrimp

15 Kashmiri Chillies Soaked in water

20 garlic cloves

1/2 inch ginger

1/2 tsp Cumin Seeds

1/2 tsp peppercorn

1 inch cinnamon stick

1/4 cup sugar

1/4 Oil plus more for frying

1 tsp salt

1/2 tsp turmeric powder

1/2 cup Vinegar

10-12 curry leaves

Method:

  1. Marinate the shrimp with salt and turmeric powder.

  2. Using the vinegar, grind together the Kashmiri Chilies, ginger , garlic, cumin seeds, peppercorn, and cinnamon sticks. Do not use water

  3. Heat a large pan with oil and fry the shrimp


4. Once the shrimp is fried, add in the curry leaves and ground masala. Add in additional oil if needed. Fry for about 3 minutes on medium flame before adding the sugar




5. Let this mixture simmer until the oil rises to the top (keep stirring, don’t let it burn)


6. For best results, enjoy it in a day or 2. The more it cures, the better it tastes.


This will last 2 to 3 weeks in the fridge, I don’t recommend freezing it.
