What's better than a hearty, creamy chicken dish? A heart, creamy, spicy and flavor packed Chicken Dish.
This dish is a gravy; so it should be served on a bed of rice or with a side of Naan. It is a little intricate, so it does take some time and love to prepare BUT it's all worth it in the end
I named it Marry Me Chicken because it truly is special and one-of-a-kind; just like someone you'd want to marry ;)
Now, Let's get cooking!
Utensils and Tools needed for this recipe are:
a Cutting Board
Pairing Knife
Measuring Spoons
A large Saute Pan
A Large Cooking Spoon
A Cooking Range
Mixing Bowl
Electric Blender
Ingredients:
1 whole chicken cut up OR 6-7 boneless chicken thighs cut up in 2 inch pieces
2 cups sliced Red Onion
8-10 Curry Leaves
4 Thai Green Chillies
1/4 Cup Oil
1/4 cup chopped Cilantro
The juice of 1 fresh lime
1 tsp salt to taste
For the Marinade:
1/2 inch peeled Ginger
6 cloves of Garlic
1 tsp Red Chilli Powder
1 tsp Chicken Masala Powder
1 tsp Curry Powder
1 tsp Garam Masala Power
1 tsp Black Pepper Powder
1/2 ball of Tamarind
1 tsp Soy Sauce
1 tsp Tomato Paste
2 Tomatoes
1 cup Yogurt
1 tbsp Salt
1/2 tsp Turmeric Powder
1/2 bunch of Mint
8-10 Almonds or Cashews
Method:
Using a blender, blend together all the ingredients for the marinade. Do not over blend, about a minute is ok!
Add this marinade to the chicken and set it aside for about an hour
Heat up a large sautee pan with some oil on medium heat. It is important to use a large pan to make sure that your chicken is not overcrowded and has plenty of room to sautee.
Add the onion, curry leaves and sliced green chilies and let it fry until the onion has browned.
Next, add the chicken to the pan. Let it cook for about 4-5 minutes before mixing it around. This lets the pieces that hit the pan sear well.
Mix the chicken around and cover the pan until the chicken the cooked all the way through. About 20 minutes
Check for salt and add additional salt to taste
Next, let it cook for another 20 minutes uncovered, allowing the excess water to evaporate and the oils from the dish to rise over the gravy. Still on medium heat.
Last, garnish with fresh cilantro and fresh lime!
Serve hot with Naan or Rice
