Ya know that extremely comforting taste of Pot Roast falling apart right when your fork touches it? That's how you know a pot roast in DONE RIGHT!
My favorite Sundays consist of time with my family, watching movies, playing games, going on bike rides or walks, all while this cooks in the crockpot
This pot roast is a little different than the Leave Me Alone Pot Roast where you just dump everything in a crockpot and let it do it's thing.
THIS...requires a little more prep BUT it explodes with flavor, spice and all things nice :)
Here's What you'll need:
3-5 lb of a good cut of Pot Roast (I buy mine at Costco)
3 Kashmiri Chillis
1 cup of chopped red onion
2 tsp Red Vinegar (Apple Cider Vinegar)
3 tbsp Oil
For the Marinade:
Grind together and marinate Beef for 10-15 minutes with the below ingredients
3 tablespoons of Ginger Garlic Paste
2 green chillies
1/2 tsp Cumin Seeds
3-4 Cloves
2 inches Cinnamon Stick
1tsp Black Peppercorn
2 tsp Salt
1/2 tsp Turmeric Powder
1 cup chopped Cilantro to garnish (optional)
Method: (Instant Pot/Crockpot/Stovetop)
Heat a pan big enough to sear the marinated beef. If needed, you can cut up the pot roast into smaller chunks (I usually do) Add in the Oil and Kashmiri Chillies
Sear the beef chunks until they are browned (2-3 minutes each side)
If you are using a pressure cooker, after searing the beef, add in 1 cup of water along with the chopped onion and allow it to cook on low-medium for 10-12 whistles.
If you are using a crockpot or Instant Pot which is what I have gotten my best results in, after the chunks of beef are seared, throw them into a crockpot along with 1 cup of water and the chopped onion and allow it to cook on high for about 4 hours
Once it's cooked, add in the vinegar, and top it off with some fresh Cilantro
If you are using an Instant pot, you can sear the beef chunks on the Saute Mode
Once it's browned add in the water and onions. Turn it to pressure mode and cook it for 10 minutes. Once the 10 minutes is up, turn it to the Slow Cook/Yogurt mode for about 4 hours...and you will have the best, melt in your mouth pot roast ever
You can Serve this with Hot Basmati Rice or a Rice Pulao...OR (see below)
(For a western twist, I sometimes serve it alongside some mashed potatoes and brocolli)
...OR you can slice them up and use them to make Roast Beef Sandwiches (Recipe Below)
How to make my kid-friendly, lunch special, Roast Beef Sandwiches
Toast 2 slices of bread of choice
Apply 1/2 tsp of Mayo
Stack 2/3 slices of Beef
Top with Cucumber a little red onion, salt and pepper
If you'd like, you're welcome to add lettuce and tomato, it's yummy, but the sandwich doesn't always hold well
