Coconut Rice

The first time my family tried this dish was when we visited Clearwater, FL with our 2 under 2 little ones.
They would eat one bowl after another, and we'd always go back for more.
And so I recreated this dish at home so they could indulge in it, and now it's a FAN FAVORITE!
You can serve this coconut rice by itself, it's super creamy and comforting
Or you can serve it accompanied with your favorite protein.
I've served mine with Mongolian Beef, Chicken Curry or in this recipe, I served it with Chicken and Brocolli
So let's get started:
For this recipe, you will need:
2 cups of rinsed Jasmine Rice
1 can Coconut milk
2 tablespoons Butter
1/4 tsp Kosher Salt
1/2 cup Water
Directions:
In a large sauce pan, add the rinsed rice, can of coconut and water.
Bring this to a boil
Once it begins to boil, turn the stove down to low, so it can simmer
After the water is about half way evaporated, add in the butter and give it a stir
Cover the Saucepan until the rest of the liquid evaporates
Using a fork, fluff the rice and serve
Optional: Top it off with lemon zest for a little extra tropical flare
