Also known as Russian Snowball Cookies, typically these are made with Pecans! We have a nut allergy in our house, so I decided to revamp mine using Almonds!!!
So, here we go...
Here’s what you’ll need:
2 sticks or 1 cup of Butter
1 cup powdered sugar to roll
1 tsp of Maple Syrup
(or vanilla, I just never have any)
1/4 tsp Salt
2 1/4(ish) cups of Flour + some to roll
1 1/2 cup chopped Almonds
First...
Pre-heat your oven to 350. Then, using a mixer, cream the butter. You can add 6 tablespoons of sugar if you’d like it a little sweeter, I usually skip it. Add in vanilla/maplesyrup
Next...
Add 1 1/2 cups of flour. Then slowly add in the rest. The mixture should be a little crumbly, if it’s now, add a tad bit more flour. add the salt and almonds and you're done with this part
Then...
Make little 1 inch rounds of the dough and bake them for about 12-15 minutes or until they are golden brown on the bottom. These cookies don't spread, so you can place them about 1 inch away from each other

Once they're out of the oven, let them cool for about 5 minutes before rolling them in the powdered sugar. If you do not let them cool down a bit, you will have a sticky mess...so let them cool!
